Thank you all for the incredible response to my last newsletter. I am humbled by the positive feedback and eagerness to dive into my Mom’s meatball recipe.
Spending time with our families day and night gives us so many precious moments to embrace and savor. With so many requests, I will continue to share some of my go-to recipes so you can cook them for your families.
As mentioned before, being in my kitchen is a blessing for me; and being able to share this time together with my kids is even more special. My kids have become my sous chefs and bakers. I would never normally have this time with all three being together like I do now and I am treasuring it! Our evening activity has become finding a dessert that the kids want to bake.
Let’s Make the Best of These Times Together
A few nights ago, my older daughter Jessi and I were trying to figure out dinner by what I had left in the fridge. We had all the ingredients for what she calls “her go-to dinner” that she used to make in college and now makes after work in NYC. She calls it the “Veggie Rice Bowl”. Since we used cauliflower rice instead of regular rice, we named this dish “Veggie Cauliflower Rice Bowl”. You can be creative and add in other favorite veggies and protein. Thanks to Jessi, this is now another recipe in my repertoire!
Veggie Cauliflower Rice Bowl
Serves 4 People
- 3 boxes of ground cauliflower.
- 3-4 teaspoons of olive oil.
- 2 tablespoons of sea salt.
- 2 chopped onions.
- 2 bags of broccoli florets.
- 2 sweet potatoes.
- 2 avocado.
- 3 boxes sliced shiitake mushrooms.
- 1/2 cup of Soy Vay or teriyaki sauce

Sauté the cauliflower in a saucepan with olive oil and sea salt until it is steamed through but not too soft.

Separate in different pans sauté the onions, broccoli, and mushrooms.

Bake the potato (for quicker cooking, microwave for 8 minutes).

Cut in cubes and sauté in a pan with Soy Vay Veri Veri teriyaki sauce (or any teriyaki sauce) until it gets crispy with the sauce coating the cubes

Slice the avocado.

Plate the bottom of your bowl with the cauliflower rice and add the different veggies and sliced avocado on the side.

Top it off with either more Soy Vay teriyaki or my favorite Aioli (Stonewall Kitchen- Sriracha Aioli).

Substitute for any rice and veggies to create the rice bowl of your desires!
