At this point staying home is the new normal. Although it has been a challenging time for the world, it has also been a time of embracing simple pleasures. Finding joy in an afternoon walk in the neighborhood, having a FaceTime or Zoom call with an old friend or simply opening up that book that has been sitting on your nightstand for months.
We are so fortunate to have the technology we do that enables us to connect so quickly with our friends, family, and co-workers and we are seeing how much we can accomplish with the changes we have been forced to make.
This time of pause has been a time of appreciation, learning, and sharing with one another. It gives me so much pleasure to share the love I have for cooking. Continually trying to figure out exciting recipes that all three of my children will enjoy can be somewhat challenging, since my older daughter doesn’t eat meat and my younger daughter doesn’t love fish. This recipe is rather simple, absolutely delicious, and wins over even the weary fish eaters, you won’t even realize you're eating fish!
Stay Positive, Stay Calm and Stay Home!
Tasty Tuna Burgers
Serves 4 People

1.5 tablespoons sesame oil.

1.5 tablespoons low-sodium soy sauce.

½ teaspoon crushed red pepper.

1 egg lightly beaten.

1 pound sushi-grade tuna, finely diced.

¼ cup finely diced red bell peppers.

2 scallions finely sliced.

Kosher salt.

½ cup panko breadcrumbs.

Olive Oil for cooking.

In a mixing bowl pour the sesame oil, soy sauce, red pepper flakes, and beaten egg.

Mix well, then fold in the tuna, red peppers, and scallions.

Mix well to combine all.

Sprinkle salt and fold in the panko breadcrumbs to lightly bind everything.

Form the mixture into patties and set them on a platter.

Refrigerate for 15-20 minutes so that the patties get firm and hold their shape when cooked.

Heat a nonstick skillet over high heat and add the oil.

Cook the patties so they get browned on the outside.

Depending on if you like more rare inside – about 3-5 minutes and if more cooked through 5-10 minutes.

Serve inside a warm bun (can grill on high heat).
Add:
- Spicy Sriracha Mayo (my favorite Stonewall Sriracha Aioli).
- Spicy Mustard.
- Pickled ginger.
- Pickles.
- Sliced tomatoes.
- Butter lettuce (wrap them as an alternative to bread).
- Top it off with sautéed onions or shallots.
