We have been through a lot together as a nation by staying home these past several weeks. We’ve learned, struggled, adapted, persevered, and grown in ways that are often unexpected. Many have come to realize that the simplest things in life are the most meaningful and fulfilling. 
These times have also allowed us to nurture creative pursuits that we may have not otherwise had the time to do. Some who have always loved to cook might be sick and tired of being in the kitchen, while others have now found a whole new excitement in creating meals. 
I find that our family is experiencing earlier dinner times since we’re at home and don’t need to be at or come from somewhere else. As a result, I am turning to recipes that have quick prep and cook times. Here is a great, easy, and simple recipe that you can dress up or keep it as modest as it is.

Greek Style Fish With Yogurt and Lemon

Serves 4 People
  • 4 Strips of fresh Halibut (skin off).
  • Olive Oil
  • Sea Salt
  • Fresh Pepper
  • 2 large Lemons.
  • 1 cup Greek yogurt.
  • A handful of fresh chopped dill.
  • (Or you can buy ready-made tzatziki).
  • Preheat oven to 450° F.
  • Place pieces of fish on a baking tray layered with parchment paper.
  • Lightly coat the fish with olive oil.
  • Season each piece with sea salt and fresh pepper.
  • Slice the lemons into thin rounds and place 2 rounds on each fish piece.
  • Drizzle with more olive oil.
  • Roast in the oven on the center rack for 10-12 minutes.
  • With a spatula take each fish off the pan onto plates.
  • Spoon any extra juices over the top of the fish and more lemon juice.
  • Top fish with a sprinkle of more salt.
  • Serve the tzatziki on the side for dipping.
This dish goes great with roasted potatoes and any green veggie.
Note: You can use any white flaky fish aside from halibut such as cod or mahi-mahi.
